Ruth's Vegetable Delights
Broccoli Coldslaw
Ingredients
Directions
3 pcks. Broccli Coldslaw (Shoprite)
1 cup Sunflower seeds
1 cup sliced almonds
1/2 cup green onions
2 pcks Beef Ramen soup (noodles)
Dressing
1 cup oil
1/3 cup vinegar
1/2 cup sugar
seasoning from soup
Mix together dressing and poor over crumpled noodles and broccoli mix

Zucchini Pie
Ingredients
Directions
3-4 cups diced zucchini
4 eggs
1/2 cup oil
1 med. onion chopped
1 cup bisquick
1/2 cup grated cheese
parsley
1/4 tsp salt
1/2 tsp pepper
Mix ingredients together adding the zucchini last. Bake at 350° degrees for approximately 30-40 min.s
Ted's Egg Casserole
Ingredients
Directions
12 slices of white bread with crusts
1/2 lb of sharp cheddar cheese
1 pint of milk
6 eggs
1/2 tsp dry mustard
1/2 tsp salt
1 lb bacon
3/4 stick of butter
Grease the bottom & sides of a 9" x 13" pan. Cut the bread into cubes and put in pan. Melt the butter and pour it over the bread. Mix together the eggs and milk, with mustard and salt , and pour 3/4 of it on top of the bread cubes. Put the cheese on top of that and mix it into the bread. Pour on the remainder of the egg/milk mixture. Cook the bacon, cut it up into small crunchy pieces, and sprinkle it on top of the bread & eggs. Cover it with plastic and leave in refrigerator overnight.
In the AM, cook it at 300 degrees for 1 hour.
